    • Ingredients
        • 1 butternut squash

        • 2 tablespoons olive oil

        • 1 small red onion

        • 1 teaspoon minced garlic

        • 3 tablespoons all-purpose flour

        • 2 cups vegetable broth

        • 1/2 teaspoon dried sage

        • 1/2 teaspoon nutmeg

        • 1 package of lasagna noodles

        • 2 cups shredded cheese

        • 2 cups wild mushrooms

  • Directions
      • Preheat oven to 375F. Peel and dice the butternut squash. Cut onion into thin slices. In a large skillet, heat the oil over medium heat. Add onions and garlic, cooking until softened. Add the flour and stir for 1 minute. Slowly whisk in the broth and stir in the sage, nutmeg, and squash. Simmer for 5 minutes.

      • Spread a thin layer of squash mixture at the bottom of a 9 x 13-inch baking dish. Place a single layer of lasagna noodles on top. Spread 1/2 of the squash mixture over the noodles. Sprinkle 2/3 of the cheese over the squash layer. Cover with another single layer of noodles.

      • Spread the rest of the squash mixture over the noodles. Sprinkle mushrooms and the remaining cheese over the top. Bake for 25 minutes uncovered. Let the lasagna cool for 10 minutes before slicing and serving.

    • Ingredients
        • 3 tart apples

      • In a large saucepan, melt butter over medium heat. Add onion and garlic and cook until softened, about 5 minutes. Add the flour, mustard, and cayenne pepper and cook for about a minute.
