  • 2 celery ribs, diced
  • 4 carrots, peeled and cubed
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 1/2 cup all-purpose flour
  • 3 cups stock (beef, chicken, or vegetable)
  • 2 large potatoes, peeled and cubed
  • 1/2 cup frozen peas (optional)
  • Salt and pepper to taste

Instructions:

  • Heat the cooking oil in a large skillet over medium-high heat. Add the beef cubes, season with salt and pepper, and brown all over.

  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 1/4 cup all-purpose flour
  • 1/2 cup dry red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 2 potatoes, peeled and cubed
  • 1/2 cup frozen peas

Instructions:

  1. Heat the oil in a large skillet over medium-high heat. Add the beef cubes and season with salt and pepper.
  2. Cook, stirring occasionally until the beef is browned, 5 to 7 minutes.
  3. Transfer the beef to a 6-quart slow cooker.

Ingredients:

  • 2 pounds beef chuck roast, trimmed and cubed
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 4 cloves garlic, minced
  • 2 celery ribs, chopped
  • 2 carrots, peeled and chopped
  • 1 (16-ounce) can of diced tomatoes
  • 1 (14.5 ounces) can of beef broth
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons dried oregano
  • 2 bay leaves
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 (8-ounce) package of sliced fresh mushrooms
  • 3 potatoes, peeled and cubed

Directions:

1. Place the cubed beef chuck into a slow cooker. Sprinkle with flour, and toss to coat.

2. Heat the olive oil in a large skillet over medium-high heat. Cook and stir the onions, garlic, celery, and carrots until lightly browned about 7 minutes. Transfer to the slow cooker with the beef.

3. Pour the diced tomatoes, beef broth, Worcestershire sauce, oregano, bay leaves, thyme, salt, and pepper over the vegetables in the slow cooker. Stir in the mushrooms.

4. Cover and cook on LOW for 8 to 10 hours, or until the beef is fork-tender.

5. About 20 minutes before serving, stir in the potatoes. Let the stew cook until potatoes are tender, about 20 more minutes. Serve the delicious slow-cooked beef stew with a simple side salad.
